Matt says there is no way to know ahead of time so you just have to show up. Assuming there are no weather problems, mechanical breakdowns or Imagineering has closed it for one reason or another, it should be open.
Mike Scopa recommends going to Guest Services and asking them or going to the attraction and asking a Cast Member there.

LS06 Caller Mark’s last tip is that Animal Kingdom is extremely hot during the summer. He suggests that you get a cup of ice water at one side of the park and while walking to the other side of the park, use the ice water to cool you down on the long trek, and then dump it when you get to the attraction. Then repeat the process after you have finished the attraction. It will keep you really cool for the day.

Len feels the answer is no.
Mike Scopa says something similiar to Lucky may be coming sometime in the next two years or so.

Mike from Westwood, NJ wants to know if he can see all of Animal Kingdom if he’s going to be down there for just the afternoon on his arrival day.
Len thinks Mike can do the highlights given the timeframe but thinks FASTPASS will likely be gone.
Len says after 3:30 or so the park dies so it will be easier to do some of the headliner attractions.
Matt says the last 2 hours the park is open is when Mike will have the easiest time with waits.
Len says to make sure he’s not going on an Extra Magic Hour day and to start with a stage show.
We all agree 30 minutes is the most we’d wait for the Kilimanjaro Safari.

Len says no new attractions are being mentioned but Disney did just announce a new restaurant for the Asia section that will be opening in 2007, “In summer 2007, an Asian restaurant will debut in Animal Kingdom’s Asia, at the current site of the Chakranadi Chicken Shop. The eatery will offer both full service table dining and quick service food. “.
